Introduction

This area has many large wild olive trees (Olea europaea, var. sylvestris). These olive trees are of the same species as other smaller ones, with almost round leaves and pointed branches you might have seen among the garrigue. The soil, water and weather conditions, and how they are affected by external causes such as animals or the wind that will decide whether the trees are small and dense or large and tall.  The differences with cultivated olive trees are essentially due to the different grafts carried out by people, and better conditions, with richer fertilised soil.
