Introduction
The herds of cattle in summer were driven up the mountain to look for more abundant pastures and, in winter, they returned again to spend the colder months on the plain. So that the animals did not damage the crops, ditches were built. Taking advantage of the rocks that were extracted from the fields when they were cleared, dry stone walls were erected at the edges, high enough to prevent the sheep from entering the olive groves. At present, there is hardly any livestock, and the ditches are in disuse. Lack of maintenance is causing these dry stone walls, built over many centuries, to quickly disappear.
